A fateful tour of Maker's Mark Distillery in 2009 inspired David Perkins and his wife Jane to start their own operation. David â a former biochemist â basically said, âHey, I can do that!â and moved his family to Utah and began their new venture. High West began with humble roots, opening a small, 250-gallon still and Saloon in a historic livery stable and garage. The once small operation has now grown to be an internationally recognized brand with four unique locations.
